Carrot Cake Loaf With Cream Cheese Filling Recipe

Reading material: “Heir of Fire” by Sarah J. Maas (you have to do something while it’s in the oven…)


For The Loaf

1 cup vegetable oil

1 1/4 cups flour| plus extra for dusting

1 teaspoon baking powder

1/2 teaspoon baking soda

2 teaspoons cinnamon

3 eggs

2/3 cup chopped walnuts

1 cup sugar

1 teaspoon vanilla extract

2 cups finely grated carrots

For The Filling

230 grams cream cheese

1/2 cup sugar

1 teaspoon vanilla extract

1 egg

3 tablespoons flour


Preheat oven to 175C.

  1. Oil and flour your loaf pan (or use baking paper).
  2. Combine flour, baking powder, baking soda and cinnamon in a bowl and set aside.
  3. In a separate bowl, whisk together eggs and sugar (preferably using a mixer) until mixture is pale and fluffy.
  4.  Slowly add oil and vanilla extract with, mixer still running.
  5. Add dry ingredients and fold until combined.
  6. Add carrots and walnuts and mix with a spatula until you achieve a homogenous mixture.
  7.  Pour half the mixture in the prepared loaf pan, followed by the cream cheese filling. Then pour the second half on top to cover the filling.
  8. Bake for 50-60 minutes or until a skewer comes out clean.
  9. Let cool on a wire rack.
